I am in the process of writing a Squidoo Lens that this treat will be listed on. But until it is done, I wanted to go ahead and share this. The other morning I ran out of Nutrigrain bars and wanted to make something similar. I was reading a couple of different recipes I have but nothing sounded good. So I went into the kitchen and started looking at the ingredients I had on hand and came up with this recipe. I was creating the recipe as I was going along, so I had a few after thoughts and decided this would make a good party treat as well, especially for Halloween.

For the sake of calling them something, on the lens I am writing I call them "Little Bites" because for the recipe for the lens, they have chocolate drizzle on top and cut into Bite Size pieces.

Little Bites!

¾ cup Graham Flour
¾ cup White Flour
2 Tablespoons Milled Flax Seed
½ cup Brown Sugar
2 teaspoons No Sodium Baking Powder
½ teaspoon No Sodium Baking Soda
2 egg whites
¼ cup Canola Oil
½ cup chopped Nuts
1/8 cup water
1/2 pint of Apple Butter
½ cup Dark Chocolate Chips
½ cup Peanut Butter (optional)


Mix everything together and bake at 375 degrees for 20-25 minutes. I used a 9 x 13 pan lined with parchment paper and sprayed the sides with a light cooking spray. If you do not have any homemade apple butter, you could easily cook some diced apples in a pan with a little butter, cinnamon and brown sugar. Every year I always make a batch of apple butter so I can have it throughout the year. Thank goodness Fall Equinox is not too far away because I am almost out and apple butter is one things I just always make during that time.

Since your 'Little Bites' contain both chocolate chips and peanut butter, there's no doubt they taste amazing.

Thank you both. I just finished the last one from the batch I made last week. I usually have one with some light yogurt and OMG they go so good together. Yep, Coreen it is so funny because sometimes my husband will come home and say, "So what kind of inventions did you come up with today and does it have a name!" If by chance either of you try things... try adding something that is a favorite of yours and see how it comes out. I am going to add raisins next time I make them.
