There are several vitamins in maple syrup such as Niacin, B5, B2, Folic Acid, B6, Biotin and Vitamin A; just to mention a few things. Another interesting fact is: It takes 40 gallons of clear, barely sweet sap that is boiled down to produce “One” gallon of syrup!
One day I went online searching for recipes, found several I wanted to try, and even cooked a few that day! The best part was the recipes came out good and my husband loves them! So being the Mad Scientist of Cooking, I wanted to create a healthy breakfast bread to have in the mornings and came up with one that is fantastic especially with a little whipped cream cheese or a little light butter.
If you have followed any of my other articles- I wrote one about making homemade apple butter that would be fantastic with this recipe. This recipe is called: Applesauce Maple Breakfast Bars. My thought process was trying to create something like a Nutrigrain bar, so at first I was going to place some batter in a pan, add some applesauce than top with more batter. But instead I just mixed the applesauce in the mixture. I am so glad I did because it adds just a touch of tartness, but it helps to keep the breakfast bars moist and the apple flavor with the maple flavor just merge together just right.
