The one time I hate to cook is during the summer. So I figured out a way to simplify this by cooking bulk in my crock pot. I eat chicken often, BUT it has to be cooked a certain way and that is in my crock pot with apple juice, apple cider and a touch of honey.

I am pretty blessed with our local store because I pretty much have their “sale system” marked. And when they post boneless, skinless chicken breast on sale, I will stock up. I may have to cook two days in a row in my crock pot, but I will have enough chicken frozen for two weeks worth of meals.

When chicken is the primary meat in the house, you have to be creative in the things you make. So I have came up with some interesting, fast dinners to make with the chicken and it only takes me a few minutes to put this meal together. This Squidoo lens has several of my recipes on it. Since I wrote this lens, I have come up with even more recipes that I need to post. If you try any of these recipes, please leave me a note and tell me how you like them.

Oh I sure do appreciate these recipes! We raised our own chickens this past summer and are always looking for new ways to create a meal.

We did raise free range chickens and also turkeys. Plus we have our hippy chicks :) that lay eggs for us.

That must be exciting. Do you have a local store you sell your eggs too and such?

We would have to get licensed to sell them so what we have been doing is freezing them if we don't eat them within a couple of weeks. Beat the eggs and then fill ice trays, freeze, pop out and put in vacuum bags...yummy for quiche, scrambled and more.
