I love coconut macaroons. My sister in law makes them all the time. I am always so impressed with how wonderful they are and how she would take the time to make this delicious and very difficult to make cookie....NOT!

Coconut macaroons are wonderfully simple. Only three ingredients and very very easy. Here is a recipe that proves you too can have some macaroons before the hour is up. Enjoy!
