In anticipation of all the vegetables and fruit that are going to be harvested from our garden or purchased at the local Farmer's Market I decided it was about time to get a pressure cooker for canning. Up until now I've only canned with a water bath method. Certain vegetables and fruits require the pressure cooking method because of their low acid content.

In my search for the perfect pressure cooker there were three key points I considered in my shopping choice:
  • Customer recommendations - it was important for me to read what others had experienced with their pressure cooker.
  • Size mattered - When I get to canning it's a whole day affair so I wanted to make sure to have a pressure cooker that had plenty of room to can lots at a time.
  • Company history - I wanted to be assured that the company knew how to make a pressure cooker...nothing worse than buying a fly-by-night and having it fizzle in the middle of my canning marathon.

Yep it was worth the research. Cannot wait for this to arrive so we can start pressure cooker canning!
