I know that saying a cupcake can be healthy brings up a lot of questions. So instead of calling this a healthy recipe, I am going to say it is healthier because of the ingredients I used.

When we are creating recipes, there is a lot of experimenting and sometimes things to be changed to make the product better. After tasting these cupcakes, now I wish I would have added some nutmeg to the ingredient list. So perhaps if you try this recipe you may want to add some nutmeg. Next time I make them, I think I will start with a 1/2 teaspoon.

Also, I used a lot of organic products in this recipe. What I do is when I go grocery shopping and see an item on sale like organic coconut, I will purchase it and keep it in the freezer. I believe I paid $1.99 for the bag of coconut I got on sale and that has been several months ago. The point of me telling you that is, although when you hear someone talk about using organic ingredients knowing they can be very expensive, often purchasing items on sale and keeping them frozen works fantastic. I am too frugal to pay a lot of money for organic items, unless they are on sale.

Just as I created this recipe, when you try it; play with it. Change and add ingredients the way you would like them. Your feedback is always welcomed and appreciated.
