Wonder if you can tell me, because I have never tried oxtail or tripe, is the end result after stewing spongy or really tender? I've just always imagined those two meats to have a bit of a 'rubbery' bite.

Hi Correen,

The oxtail is really tender after cooking for a few hours, to the point where it should be falling off the bone. The tripe can become a little spongy, but it soaks up all the flavors so I love it. I think tripe is an acquired taste, though. I think you either love it or hate it.
