Here's my recipe for vegan/dairy free baked ziti. It can easily be made with meat sauce if you prefer. I'm gluten free as well as dairy free so I've made it with GF pasta. I also can't do tomatoes so I use this No Tomato Sauce for Pasta instead.

Recipe for Guacamole

2 ripe avocados
1 tablespoon lemon juice
1 small clove of garlic, if desired
1 small fresh red chili, seeded, chopped finely
1 shallot, finely chopped
1/4 red onion chopped finely
pinch of salt
Freshly cracked black pepper

1) Cut avocados in half, remove the stones and scoop the flesh onto a plate, mash well..
2) Add lemon juice and garlic if desire
