Have all the ingredients ready before the crowd arrives for this delicious and unique salad. My favorite part of this salad is the glazed almonds that you sprinkle on top.

Ingredients
- Head or two (depending on size of bowl and crowd) of green or red leaf lettuce; washed and hand shredded
- Medium purple onion; peel, wash, and thinly slice (into rings or bite-size pieces)
- 1-2 cans of mandarin oranges; well drained

Place shredded lettuce in bowl, top with onions and mandarins. Sprinkle with sugar glazed almonds. Use a homemade or store bought balsamic vinaigrette for dressing...a raspberry blend is superb

How to make the sugar glazed almonds

In a frying pan toss 1-2 cups of slivered almonds with a few tablespoons of sugar, constantly stir until golden brown (do not leave the pan - they will burn and turn on the fire alarm :). Immediately transfer to a plate until cool.

Options:
Add freshly washed baby spinach for vibrant color and added vitamins.
Substitute or add some in-season berries!
