Many nights I return home looking for something quick and easy to toss together for dinner. This 15 minute potato recipe is one of my faves and better than the deep fried, salt laden alternative. Serve 'em with lamb to a barbecued burger, top it off with a fresh green salad for a delicious and quick meal.

Ingredients
1 tablespoon olive oil
2 garlic cloves, sliced
2 sprigs fresh rosemary or 1/4 teaspoon dried
1 1/2 pounds red new potatoes, scrubbed and thinly sliced
Coarse salt and ground pepper

Combine oil, garlic, and rosemary in a 2-quart microwave-safe baking dish with a lid. Cover, and microwave on high until garlic is fragrant, 1 minute. Stir in potatoes. Cover, and microwave on high until potatoes are tender, 13 to 15 minutes. Season with salt and pepper.

More Ideas
- Try cutting the red new potatoes into small chunks rather than thinly sliced.
- Use any combination of fresh herbs, especially if you grow them in your garden.
- Add a couple of tablespoons of minced sweet onions with the garlic.
- Right before serving sprinkle with sliced green onions or chives.
