One Potato, Two Potato, Potato Cakes for Two!

This is a true story-Last night when I was trying to figure out what to make for dinner I opened my refrigerator and stood in front of it thinking. I noticed I had a little of this, a little of that and I decided to take the leftovers and create an easy quick recipe.

I had a little shredded cheese left in a container along with a few leftover mash potatoes and a white onion. So I decided to make some easy potato cakes. I looked in the freezer and seen I had a small piece of roast frozen and got it out.

Living up North especially around the PA area everyone talks about Philly Steaks and sometimes I just get a craving for something similar so I created my own Philly sandwiches. I boiled the roast to get it thawed and set it aside until it cooled. I sautéed some onions, sliced the roast and added some mozzarella cheese to the pan so it could all together. I served it on rye bread.

I took the leftover mashed potatoes, shredded cheese and put it in a mixing bowl. I added one egg white, one tablespoon of flour and some Ms. Dash Caribbean Citrus Seasoning. Mixed everything together and flattened it and rolled it in unsalted bread crumbs. I preheated a small fry pan and lightly sprayed it with canola cooking oil and cooked the potato cakes until they were brown.

How is this for a fast, quick recipe? Did I mention how much my husband liked the dinner? And the best part, I had enough leftover to have for lunch today!

Oh these potato cakes sound simply fabulous! I had not heard of Ms. Dash Caribbean Citrus Seasoning...I must look it up!
