2 ripe avocados
1 tablespoon lemon juice
1 small clove of garlic, if desired
1 small fresh red chili, seeded, chopped finely
1 shallot, finely chopped
1/4 red onion chopped finely
pinch of salt
Freshly cracked black pepper
1) Cut avocados in half, remove the stones and scoop the flesh onto a plate, mash well..
2) Add lemon juice and garlic if desired, and mix well.
3) Very finely chop chili and red onion and add to mixture together with chopped shallot..
4) Stir in salt and cracked black pepper.. Serve with tortilla chips or use on wraps, burgers or sandwiches..
