To make a change from plain old mash potatoes I will sometimes perk them up a bit. One nice addition to a mash, especially when combined with strong flavours like beef or a hearty sausage, is to add 1 - 2 cloves of roasted garlic to the potatoes before mashing.

I don't have a recipe of my own for this, but found this simple recipe for making roasted garlic over at All Recipes UK.
